Dear Clients, Collaborators and Friends.

I wanted to take this moment to write to you all to say that you are all in my heart.

One of the many wonderful perks about Deliciously Sorted is that for a few weeks of the year we get to know you, your friends and families so personally, that now I am thinking about you all as we experience the lockdown that our respective countries have introduced. 

Clients, I know what extraordinary jobs you have worldwide that enable you to take the holidays you do to Ibiza and the Balearics. 
Suppliers and friends, I know that all our jobs our paralyzed. 
While the immediate financial future may seem uncertain for us all, we have been given this extraordinary moment to pause.

And then this too shall pass.

In the meantime the islands are more beautiful than they have ever been as nature teems while the islands rest.
All of you as clients and suppliers through being the DS family, have indirectly supported my charity, the Ibiza and Formentera Preservation Foundation.  The joy for us after this period is there will be more sea life, cleaner water and richer land.

So let us take comfort in the nurture that we can enjoy during this exceptional moment. 

As such I share with you a Balearic mix to transport you to holiday times with your nearest and dearest, this video of the clear soothing Balearic sea, and my own personal banana bread recipe as I go back to my cooking roots.

As we all enjoy simpler daily life our creativity resurfaces and there is no doubt that this will infuse the Ibiza of this summer and bring us closer to the island of 20 years ago; raw, spontaneous and even more beautiful.

Balearic Beats

Serena’s Sugar Free, Gluten Free, (and can be Dairy Free), Banana bread

4 fork mashed or hand held blended ripe bananas
1/2 cup crushed walnuts (optional extra)
1.5 cup rice or coconut flour
1 cup almond milk
1/3rd cup agave
1/2 cup fat- I blend coconut oil, olive oil and linseed oil or you can use good old butter.
3 large eggs or Flax eggs
Pinch of salt
1 tablespoon baking powder
Teaspoon of vanilla if you have it,
or you can add cinnamon, I prefer without either.

Grease 8×4 inch loaf tin
pre heat oven to 350 degrees.
Beats eggs, milk and agave.
Add all other ingredients.  Stir to combine.
Bake for 50 minutes or until knife comes out clean

Let cool and then ENJOY.
